DO NOT open the box for 3 to 3 1/2 hours!!!
The ashes must be raked off the top of the box before fresh coals are fired up.
Use as much coal as it takes to keep a constant heat in the box.
After 3 to 3 1/2 hours remove the top of the box and check the pig.
Turn the pig over and cook on its belly for another 3 to 3 1/2 hours.
After the 3 to 3 hours are up remove the top of the box and check for doneness of pig.
When the pig is done remove from the box and carve.
Serve with black beans and yellow rice,
Island Style Papaya Seed Dressing
drizzled over a
Conch and Avocodo Salad.
The skin may be removed and cooked over a Bar-B-Que grill and served as "Cracklin'".
